This is my healthy spin on a breakfast favorite - the McMuffin. My version is paleo-approved and made with homemade grain-free English Muffins.

- 4 English Muffins see notes
- 4 eggs
- 4 slices of prosciutto
Make the English Muffins according to directions and set aside.
Line a muffin pan with 4 muffin tins. On the bottom, place the slices of prosciutto.
Crack the egg on top of the prosciutto.
Bake on 350 for about 12 minutes.
Serve on the English Muffins with cheese, lettuce, tomato, whatever you like.
