These Arugula Romano & Bacon Oysters are a super healthy light meal or appetizer! Yep, oysters, my friends, are a superfood. Not a bullshit superfood like chia seeds. I’m talking real-deal, ancestral superfood. Oysters are loaded with zinc, which helps boost the immune system

Ingredients
  

  • 4 oysters
  • handful of arugula chopped
  • 1/2 slice bacon chopped
  • 1 garlic clove minced
  • 2 tbsp romano cheese
  • 1 tbsp butter

Instructions
 

  • Preheat your oven to 400.
  • Add the bacon to a pan and sauté it.
  • Once it releases some fat, add the arugula.
  • One the arugula wilts, turn the pan off. Add the garlic and give it a toss (no need to cook it on the stovetop).
  • Spoon and equal amount on top of the oysters.
  • Add about 1/2 tbsp of cheese to each oyster, or more if you like.
    Divide the 1 tbsp of butter into four pieces and top each oyster with one.
    Bake for 10-14 minutes.

feel free to double or triple, I only had a small amount of oysters
