These Arugula Romano & Bacon Oysters are a super healthy light meal or appetizer! Yep, oysters, my friends, are a superfood. Not a bullshit superfood like chia seeds. I’m talking real-deal, ancestral superfood. Oysters are loaded with zinc, which helps boost the immune system
One the arugula wilts, turn the pan off. Add the garlic and give it a toss (no need to cook it on the stovetop).
Spoon and equal amount on top of the oysters.
Add about 1/2 tbsp of cheese to each oyster, or more if you like.Divide the 1 tbsp of butter into four pieces and top each oyster with one.Bake for 10-14 minutes.
Notes
feel free to double or triple, I only had a small amount of oysters
