Paleo Ranch Chicken Salad

This easy Paleo Ranch Chicken Salad is a meal prep miracle! It makes for the perfect healthy easy office lunch! It's loaded with veggies, low-carb and the creamy paleo Ranch dressing is to-die-for!

- 4 chicken thighs marinated in Tessemae's ranch
- 1 medium head of lettuce chopped
- half a large onion diced
- 1/2 to 1 cup peas boiled and cooled
- 1 large tomato diced
- 2 carrots shredded
- 1 avocado diced

Grill the chicken by cooking on both sides for about 4 minutes. You can do stovetop, but the grilled ranch chicken is SO good!
Set it aside and let it cool.
In a large bowl, add your chopped romaine, diced onion and tomatoes, peas, carrots and avocado.
Toss with ranch (I don't give exact measurements because everyone's salad size will be different based on the varying size of produce).
Chop chicken and add it on top or mix it in the salad!
