1whole butternut squashmedium sized (spiralize using THIS)
1tbspbutter
3garlic clovesminced
4big strips of baconpreferably thick cut and fatty
parsleyto top
optional but recommended: pastured egg yolksee notes
Instructions
Chop the bacon into small bites and sauté over medium heat.
Drain the fat and save for later. Set the bacon aside.
Add the butter over medium heat to the same pan.
Add the noodles and soften.
Add the garlic.
Add the bacon and toss it all together.
Add salt and pepper, top with parsley if using.
Notes
Optional: separate an egg yolk from the white and toss it with the noodles. This adds serious creaminess and nutrients from the yolk. Make sure to use an organic egg from pastured raised hens, and preferably from your local farmer!
