Ingredients
  

  • 1 batch of Asian chicken cooled, see notes
  • 2 cup romaine chopped
  • 1 cup spinach chopped
  • 1 large carrot grated
  • 1 avocado chopped
  • 1 tomato diced
  • 1/2 red onion diced
  • 1 handful cilantro chopped
  • 3 tbsp coconut aminos
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Combine cooled chicken, romaine, spinach, tomato, onion, cilantro, avocado, and carrot. Toss.
  • Add coconut aminos and olive oil. Toss again.
  • Serves two.
