- 1 medium potato peeled and diced
- 1 tbsp unflavored coconut oil found here
- 1/3 to 1/2 cup pork belly diced into bite sized pieces
- 1/2 onion diced
- 1/2 green pepper diced
- sea salt
Soak the potatoes in 1 tsp sea salt and water for about 10-15 minutes. This helps remove the starch so they crisp up.
Saute the potatoes in one tbsp of the coconut oil.
Once the edges are crispy, add the pork belly, onion and green pepper.
Cook until soft.
Optional: add jalapeños and top with a fried egg. I did. It was great.
