Greek Goat Cheese Stuffed Mushrooms

Greek food is my favorite food. Dill and oregano are two of my favorite spices and they work really well in these stuffed ‘shrooms, but feel free to add or omit any spices. You can also use feta cheese instead of goat cheese, which was my plan until I realized I didn’t have any feta. I also added red pepper flakes, because I’m obsessed with all things spicy. Greek Goat Cheese Stuffed Mushrooms Prep time: 10 mins Cook time: 10 mins Total time: 20 mins Ingredients 6 mushrooms caps, stems removed and set aside 1 tbsp butter, ghee or coconut oil 5-6 cups spinach (it shrinks!) 2 tbsp sun dried tomatoes 1 garlic clove 3.5 oz goat cheese dash of oregano dash of dill Instructions Preheat oven to 375. Remove the stems from the mushrooms and give them a chop. Give the spinach a rough chop. Melt the butter, ghee…

Greek Rice

Apparently, it’s Greek week here at AN.   Yesterday I wrote about my neverending love of Greek food. This is actually the side dish I served with the lamb stew.   It. Was. Awesome.   If you digest rice well and are looking for an easily absorbable form of glucose, and want to make things that taste really, really good, you need to make this rice.   I love that it’s not only loaded with veggies, but also healthy fats from the bone broth and butter (which slows the absoption of glucose). It’s the perfect side dish.   Greek Rice If you digest rice well and are looking for an easily absorbable form of glucose, and want to make things that taste really, really good, you need to make this rice.I love that it’s not only loaded with veggies, but also healthy fats from the bone broth and butter (which slows…

Greek Lamb Stew

Whenever Scott and I are trying to figure out a healthy dinner date, I always suggest Greek food. Not only is the food amazing, but it’s so easy to eat a nutritious meal at Greek restaurants. Beyond lamb stew, they are just the bomb. Taramosalata dip (aka fish egg dip) with cucumbers? Amazing. Mushrooms stuffed with spinach and feta? I die. A simple Greek salad with gyro meat on top? The freaking best salad, anywhere, ever. So I try to cook a lot of Greek food. This week I had a pound of lamb shanks from the farm and decided to throw a stew into the crockpot before I left for work. It turned out so well, and my entire apartment smelled like a delicious Greek joint. Greek Lamb Stew This easy slow-cooked Greek Lamb Stew made in the crockpot is perfect for cold days! Low Sugar Smoothie For Kids

Nearly every morning my boys ask for a smoothie. This smoothie in fact. My issue with the vast majority of smoothies is that they are pure sugar – fruit on fruit on fruit. This one is packed with protein, fiber, healthy fats and antioxidants – without spiking their blood sugar. Try my low sugar smoothie for kids! Why Most Smoothies Suck + Spike Blood Sugar Listen, I love a smoothie. They make a great snack or breakfast. They’re easy. They’re the perfect wait to load up a ton of nutrients into one neat little package. But most smoothies aren’t a ton of nutrients. Most smoothies are just fruit. Listen, I’m not a fruit hater. I’m down with fruits. But we have to eat them properly. Eating a ton of fruit in one sitting is NOT a good idea. Why? Because as great as fruit it, fruit still contains sugar and…

What To Eat After A Peloton Workout

I’ve joined the cult of Peloton, okay?! And I LOVE IT! Don’t judge me. This is what to eat after a Peloton workout – from a nutritionist and health coach. Like so many people since the start of the pandemic, I bought a Peloton. I wanted to workout, I wanted my husband to workout, but I wasn’t comfortable going to gyms or yoga classes. You guys, a Peloton is surprisingly cheap. I also want to let everyone know that I didn’t shell out the few grand for a Peloton. I opted for a payment plan which makes the Peloton SO AFFORDABLE. I pay my Peloton off $50 a month with only an additional $100 in interest. That’s cheaper than a gym membership! It really, truly makes Peloton accessible to so many people. I really can’t recommend it enough. Anyway, I normally workout around 6am. Before my kids wake up. It’s…

This anti-inflammatory salmon and veggie bowl is easy to meal prep, perfect for gut and overall health and is totally delicious. I love a good bowl. A Greek chicken bowl. I only meal prepped two of these bowls but I wish I’d done more. They were SO good, filling and healthy. I love eating healthy food because it literally makes my body and brain feel better. There’s a reason for this. Did you know that the food you eat isn’t just energy for your cells, it’s information? How we eat determines more than our body composition, it determines how we think, mental clarity, cognitive function, our mood, our energy, our sleep, genetic expression and so much more. I’m so in love with…
