Meal Prep Monday

This week I made: cauliflower rice jap chae (recipe will be up tomorrow!) split pea soup in my crockpot hard boiled eggs Here’s how I did it: First, I got the soup going. I love my crockpot. I chopped an onion and celery and tossed ’em in. Then I added a bag of almost empty carrots and broccoli. I added the rest of my split peas, a bunch of bone broth and a ham hock. I popped the top on, turned it on high and got it out three hours later. It really was as simple as that. I pulled all the meat off the ham hock, which was a lot. You really don’t need specific recipes to make simple meals like this. Second, I made a ton of jap chae. Asian Stir Fry Veggies (Paleo, Low-Carb)

You guys. Let’s talk about the importance of veggies. They really should be at every meal, taking up about half of your plate. I’ve found that people have this idea that paleo is a meat-heavy, super low-carb, super high-fat diet that is very meat-centric, and that’s just not the case. I obviously recommend eating ancestally, and that means eating a variety of plant and animal foods that our great, great, great grandmothers would recognize. Wild seafood, pastured eggs, organic/grass-fed meats right along with a plethora of organic, preferably local and in-season veggies. It’s not hard. We really do over-complicate food. But it’s incredibly simple to eat well. Just eat real, whole, foods that your ancestors would actually recognize as food. Not Lean Pockets or 100 calorie snack packs. Roasted Chicken and Veggies

Making a roasted chicken and veggies on Sundays has become a tradition. It’s something I do every Sunday to prepare for the week and it’s a great way to meal prep quickly and easily without having to make a shit ton of food. It’s also really nice to have a bit of a Sunday ritual. I pop this bad boy in the oven, clean the house, light a pumpkin spice candle (I’m embracing the basic, ya’ll) and go on a walk or out to brunch with my husband and son. Most days, I wear yoga pants and a Lululemon top I found on sale and some Under Armour shoes (shoutout to Kevin Plank – we went to the same high school! WHAT I ATE IN A DAY + WHAT I WORE

Maybe because I’m generally a nosy person, I love seeing what people eat daily and wear everyday. A good what I ate in a day is something I’ll always check out and I love to follow ladies who post their daily outfits on Instagram. While I wouldn’t call myself particularly fashionable, I do like to wear cute clothes and throw on a lil’ makeup everyday to make myself presentable and put best self forward. When you were a kid would you only eat ranch dressing? Like, if you had to have salad, you’d only eat it with ranch? I grew up on total junk food, basically white carbs and white sugar everyday all day long. Vegetables were a foreign concept and it wasn’t so much that I even hated them, it was just that I didn’t eat them. They were almost never offered and when they were – I want them covered in ranch. Meal Prep: Taco Salads

I’m tired. You guys – I am NOT the type to complain about my son. He’s awesome. He’s so much fun. But I’m going to be honest, he’s gotten up between 4-10 times in the night the past week and I’m just kind of tired. I KNOW babies wake in the night. We’re working on fixing this issue and it’s not a huge deal. But point being: holy hell am I glad I already meal prepped these taco salads. It’s so nice to just walk to my fridge, shake up one of these salads, pour it in a bowl and devour. Because it’s rill rill tasty. Honestly, they’re SO good.
