Mexican Sheet Pan Chicken Tacos (Paleo, Keto)

Easy to assemble and quick to clean up, this healthy Paleo & Keto Mexican Sheet Pan Chicken Tacos recipe will become your family’s new favorite. Sheet pan meals in general and this healthy paleo chicken sheet pan dinner, in particular, are my latest obsession. Now that my boys are both super mobile – they’re 3 and 18 months, I don’t have the same time frame to make elaborate roast chicken dinners. When I had one kid or even when the baby was still a baby, I had time to sautee the peppers and onions or lovingly toss the chicken in a skillet. That time is now usually spent at a park trying to prevent toddlers from running into traffic. That’s not even an exaggeration. My youngest thinks this is a fun game to play. Reasons to cook more sheet pan dinners: Trust me, having a couple of easy recipes like these…

Paleo Breakfast Taco

I am deeply in love with this paleo breakfast taco. It’s low-carb, healthy, gluten-free and DELICIOUS. It’s easy to throw together in the AM, it’s full of fiber, protein, probiotics healthy fats. The protein is from the eggs. I used one in this picture but I recommend two. Eggs have 7 grams of protein each and don’t you dare throw out that yolk. The yolks also contain protein but more importantly, the contain choline, omega-3s and vitamins. They are SO much more nutrition than the whites. If anyone ever tells you to eat egg whites – run, do not walk, away from their shitty advice. Avocados pack a healthy dose of fiber! In addition to being a healthy fat. Depending on the size, an avocado contains roughly 10 grams of fiber. That’s a lot of fiber! The probiotics are from both the fermented spicy cabbage and the sour cream. God…

Paleo Steak Tacos

I eat tacos at least twice a week. These paleo steak  tacos are one of my faves and it’s one I keep on repeat. At least a few times a week my husband will come home and say “What’s for dinner? Is it f*cking tacos again?!” Don’t worry – he’s just kidding. He loves tacos, even though he makes fun of the amount I consume. Do you guys remember a few years ago when the taco diet was a thing? People were losing weight just eating tacos from Taco Bell of all places? TACO BELL. GRADE D MEAT. Meat that’s mostly made up of soy. Total garbage. But I thought to myself, this is a diet I can get on board with. Tacos all day? Sign me up! I’m not sure how tacos originally got the reputation as being a less than healthy food, but they’re actually quite nutritious, especially…

Meal Prep: Taco Salads

I’m tired. You guys – I am NOT the type to complain about my son. He’s awesome. He’s so much fun. But I’m going to be honest, he’s gotten up between 4-10 times in the night the past week and I’m just kind of tired. I KNOW babies wake in the night. We’re working on fixing this issue and it’s not a huge deal. But point being: holy hell am I glad I already meal prepped these taco salads. It’s so nice to just walk to my fridge, shake up one of these salads, pour it in a bowl and devour. Because it’s rill rill tasty. Honestly, they’re SO good. I didn’t use to love salads but that’s because I was doing them all wrong. Like most people, I loaded it with spinach or romaine and only a few other veggies like random tomatoes, some carrots and maybe some chicken.…

Paleo Pork Tacos

Other than scrambled eggs with veggies, tacos are probably the meal I eat most often. I eat A LOT of tacos. Shrimp tacos. Crockpot pulled chicken tacos. And my new favorite, paleo pork tacos. Actually all the tacos I eat are technically paleo thanks to Siete Almond Flour Tortillas. I linked to them on Amazon but you can get them at most Whole Foods stores for MUCH cheaper. Seriously, they’re amazing. Sometimes when I try paleo products, it’s obviously that it’s an imitation of the real thing – and a poor one at that. These are not like that. They are delicious, tasty, legit tortillas. I swear I’m not being paid to say this, I’m not an affiliate or anything. This is not a sponsored post. I just really love their tortillas! My one problem is that they tend to break…if you over-stuff them…like I do. So first, don’t do…

Quick + Healthy Chicken Tacos

Sometimes I get an overwhelming desire for chicken tacos. It’s all consuming and they become all I can think about until I stuff my face with them. Case in point: last Friday I was doing my usual grocery shopping. Everett was asleep in his stroller and I was leisurely browsing in Whole Foods…because I love Whole Foods. I’m checking out a cheese melter thingy that I’ll never use and never buy because it’s thirty-seven dollars and I can melt my own cheese and…the taco craving hit. Hard. I quickly gathered the rest of the items on my grocery list and headed home. Except when I got there, the baby woke up. Which is okay, because he’s really cute and sometimes I think my heart will explode because I love him so much. So I fed him, impatiently. Silently imploring my kid to hurry the hell up so I could make…

Healthy Chicken Tacos

I love me a good taco. Who doesn’t? They’re the Mexican version of sandwich and they’re spicy and delicious. Also, it’s WAY easier to make a grain-free version of a taco and make it taste good than it is to make a grain-free version of a sandwich. Have you tried grain-free bread? Not so good. Have you tried my taco shell recipe?! It’s freaking awesome. I use tapioca flour, which is a safe starch and easy to digest. I like to add garlic and chipotle powder to the taco shell, but you can use any spice you like. Or not. Do your own thang. Fish Taco Salad

I recently wrote about my love for Mexican food, and for fish tacos in particular. It’s a strong love. After making such an amazing tasting Mexican slaw, I realized that fish would be perfect on top. I don’t eat tortillas anyway, so fish taco salad would be amazing. Plus I had leftover Mexican slaw. Grain Free Enchiladas (Gluten-Free, Low-Carb, Paleo Option)

These grain-free enchiladas are also gluten-free and paleo friendly. A flavor-packed healthy weeknight dinner the whole family will love! Surprisingly, you can still indulge in delicious Mexican cuisine even when you’re paleo and/or cutting gluten out of your diet. Just grab some gluten-free almond flour tortillas, some gluten-free enchiladas sauce and make this delicious recipe for the cheesiest and most delicious beef enchiladas. “But wait, it that cheese on top? I thought cheese was not allowed on paleo?” I hear you and yes we can talk about this! Are these gluten-free enchiladas also paleo? Can we talk about cheese and being paleo for a second? I recently hashtagged a salad with goat cheese as paleo on my Instagram. Someone commented asking, “I thought cheese wasn’t paleo?” To which I responded, “If it’s local, organic and grass-fed and works for your digestion – it’s totally fine.” The commenter said she was…

Smoked Salmon Breakfast Potatoes

These smoked salmon breakfast potatoes are perfect for Spring and even better for an Easter brunch! You guys. I love smoked salmon. I love potatoes. I love sour cream, and you can bet your ass I love fresh herbs. This dish is screams spring time to me – fresh potatoes, bright herbs and seriously ideal for a brunch outside. Preferably paired with a green juice mimosa. Plus, it’s actually really, really healthy. I know keto is all the rage, and I’m not bashing keto. It works vert, very well for some people. But just because keto works well for some people, does not mean that carbs are unhealthy. Just like keto is not inherently unhealthy. What works for one person will not work for another. For me, as a woman in my fertile years who is active and works out and has a fairly stressful life – carbs are a…
