Creamy Artichoke, Leek and Tomato Side Dish

For one of Scott’s Christmas gifts, I got us a weekend away in Easton, MD for New Years Eve weekend. It’s a cute little Chesapeake Bay town with lots of seafood, antiques and quaint everything. Our hotel was gorgeous. (I promise, Side Dish goodness is a part of this!) And they had an awesome restaurant with a heated outdoor patio. Which was great because I got to drink champagne outside in December without freezing to death. We walked around, hung out and checked out some great restaurants. One of which was Mason’s, a local farm to table restaurant with an emphasis on local seafood as well. I got a white fish (forget which kind exactly) on top of the creamy artichoke, leek, and tomato side dish that was amazing. I’ve been fantasizing about it inappropriately for almost a month now like a weirdo. So I recreated it for you guys.…

Paleo Leek, Mushroom and Grape Tomato Risotto

Risotto is such a rich, decadent food. I mean, super creamy rice – what’s not to love? Well, I don’t love eating a giant bowl of rice. Roasted Chicken and Veggies

Making a roasted chicken and veggies on Sundays has become a tradition. It’s something I do every Sunday to prepare for the week and it’s a great way to meal prep quickly and easily without having to make a shit ton of food. It’s also really nice to have a bit of a Sunday ritual. I pop this bad boy in the oven, clean the house, light a pumpkin spice candle (I’m embracing the basic, ya’ll) and go on a walk or out to brunch with my husband and son. All while this sucker is roasting away. It’s such an easy way to make a lot of healthy food. You can get SO many meals out of a roasted chicken. Take all the meat off and set it aside for the week. You guys – take my advice: make this chicken every week! One of the best things you can…

The Healthy Girl’s Guide To Charleston Part III

We woke up bright and early, had breakfast and headed to the Citadel. Scott came here as a kid and was excited to go back and walk around. Your dude might also enjoy looking around and checking out the helicopters and stuff they have. It wasn’t quite my bag, but my husband was happy to do it and I was more than fine with walking around the campus. After checking out all the cool stuff at the Citadel and buying a shirt for my husband, we headed to a late lunch at Husk. A late lunch because it was the only reservation I could get. At all. At 2 pm. On a Monday. Yes, you should book this place way in advance. It’s very popular. I routinely heard from everyone and their mom that we HAD to try Husk. That it was one of the best, if not THE best…
