20 Minute Meal: Tomato Basil Chicken

Sometimes, I love spending a long time in the kitchen cooking. Scott will have a game on in the living room, I’ll be cooking an awesome dinner and drinking wine, and it’s really fun for me. But during the week, more often than not I am hungry and want some easy, tasty food in my stomach as soon as possible.   In this case, I have an arsenal of 20 minute meals; meals that are super easy to make and still taste great. And honestly, due to meal prepping, this dinner took me less than twenty minutes, more like 15. I recently wrote a post about meal planning and prepping food for the week. In it I described how I cut up and marinated a shit ton of vegetables. And also chicken. But I date a vegetarian, so half of the kabobs were just veggies, the other half chicken and veggies. Here’s how I made them. Primal Tomato Basil Soup

  Primal Tomato Basil Soup This creamy tomato soup gets extra sweetness by roasting the tomatoes before mixing them with the rest of the soup ingredients! 5 large tomatoes (sliced in half and deseeded)1 large onion (diced)2 garlic cloves (minced)10 basil leaves1 cup organic spaghetti sauce3 cups chicken broth1 cup heavy cream (grass-fed, raw) Preheat your oven to 400. Roast the tomatoes for about 12 minutes.While the tomatoes are roasting, saute the onions in butter until soft.Add the garlic and give it a stir.Add the tomato, onion/garlic, 10 basil leaves and a little bit of broth to a blender. Did you know that majority of salad dressings and marinades are full of toxic industrial oils? Even the organic varieties are made with soy, canola and corn oils. These are some of the most toxic ingredients in modern diets. Making your own dressing and marinade is not only healthier, it’s cheaper! I spend five or six bucks on organic, olive oil based dressings at the grocery store. Or I spend like, thirty seven cents to make my own. Plus, mine tastes better. Gluten-Free Summer Shrimp Pasta

This gluten-free summer shrimp pasta is the perfect special meal to jazz up a boring weeknight – plus it’s crazy good. I made this pasta last Tuesday and all of my boys ate it up.
